Recipe: Loubnas famous veggie pastilla!




(For aprox. 4 people)


What you need:


Filo pastry dough

2 onions

2 leeks

1 1/2 handfull of dried mushrooms

1 red pepper

1 yellow pepper

3 carrots

1/2 cabbage

1 squash

1 bundle of parsley

100g butter

Spices:

Salt

Peber

Cumin

Ginger powder

Harrisa



How we make them:


1. Boil 1/2 L of water and pour over the mushrooms and leave for 1/2 hour.


2. Chop the mushrooms and vegetables and fry in a pot, add spices to taste.


3. Take a little dish or bowl and brush with melted butter

I used an ovenproof dish, and left the pastillas there to bake for the first half, but you can also turn them directly out on the baking tray.


4. take half a sheet of filo dough and fold in half to make a long rektangle with double layer dough and place in the dish as shown in the photo. Brush with butter within the dish and place the next sheet of dought to form a cross.

5. Place two more sheets to form a star and brush with butter in between the sheets of dough.


6. Fill with the vegetable mass and fold the sheets of dough around the filling. Again, brushing with butter between each layer.


7. If your dish is oven proof you can leave the pastillas in there or you can flip them out on the baking tray


8. Bake in the oven for 10-15 mins. at 250 degrees. Turn (and remove dish) and bake for another 10-15 mins until crisp and golden. ENJOY!
